Strawberry White Chocolate Chips Muffins...

Remember my post abt the mandarin orange muffins? Well, I've given it another go but this time i used strawberries and white chocolate instead. Turns out to be a real keeper! The strawberries were slightly tangy and so i decided to use white chocolate chips to balance it out. It really works wonders!

Let me document the ingredients down, in case I need to reference it in future....

What you need
  • 200 gm plain flour
  • 20 gm corn flour
  • 2 tsp baking powder
  • 110gm butter (at room temp)
  • 150gm sugar
  • 1/4 tsp salt
  • 2 large eggs
  • 50ml milk
  • 2 tbsp yogurt
  • 1 tsp vanilla essence
  • 1/2 tsp strawberry paste
  • chopped strawberries
  • white chocolate chips
What to do
  • Preheat oven @ 180C.
  • Sift plain flour, corn flour and baking powder into a bowl and set aside.
  • Mix yogurt and milk tog and set aside.
  • Cream butter till soft and then add sugar and salt into bowl and cream till fluffy.
  • Add in eggs one at a time to the butter and mix till combined.
  • Add in vanilla essence.
  • Fold in 1/2 of sifted flour till just combined.
  • Pour in 1/2 of yogurt/milk mix. Fold into batter.
  • Fold in 1/2 of the remaining flour, followed by the yogurt/milk mix.
  • Finally, fold in remaining flour.
  • Scoop out 1/2 of the batter and add strawberry paste into it. Mix well.
  • Now, scoop some batter into the muffin cups to fill up half of the cup. Add in chopped strawberries and chocolate chips. Fill cup up with remaining batter.
  • Top batter with some more chopped strawberries and chocolate chips!
  • Lastly, bake @180C for abt 25 mins, until skewer comes out clean.
Best eaten warm. Enjoy!
