Honey Bran Muffins
It's official.... muffins are a fugly lot. No matter how you try to decorate it or make it look nicer, it just won't. However, it has a redeeming quality, that is, it's healthy! I guess that somehow makes it ok. LOL.... so never judge a muffin by it's looks!
These honey bran muffins are really yummy.... give it a try if you can!
What you need
- 1 cup natural bran
- 1 cup buttermilk
- 1/2 cup butter
- 1/2 cup brown sugar
- 2 tbsp honey
- 1 egg
- 1 cup all purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
What to do
- Soak bran in buttermilk while preparing the rest
- Cream butter and brown sugar. Beat in the honey and egg. Add the bran and buttermilk.
- Stir tog the flour, baking powder, baking soda and salt.
- Add the dry ingredients to the wet mixutre and still until moistened.
- Bake at 180C for 15-20mins.
