Lavender Angel Cake
SIL bought me a pack of dried lavender flowers on her honeymoon and also passed me a stack of recipes from the "farm". However, I had other plans. *snigger*....
I've been wanting to try baking angelcake for the longest time. I have ample supply of egg whites to experiment with. And I shortlisted a recipe that seemed simple enough.
The cake turned out well... and I'm sharing the recipe here. :)
What you need
- 180gm egg white
- 75gm castor sugar
- 80gm cake flour
- 1/2 - 1 tsp dried lavender (depends on how strong your flowers are)
What to do
- Preheat oven to 180 degrees.
- Sift cake flour and set aside.
- Whip egg white till frothy, slowly add in castor sugar. Whip till stiff peaks.
- Fold in sifted flour and lavender flowers into whipped egg whites till well combined.
- Pour batter into mold. I used mini chiffon mold from Daiso. This amt of batter filled 3 molds nicely.
- Bake at 180 degrees (it took 20mins for the cake to be baked in the mini molds). For bigger molds, it shd take ard 35mins. Test with skewer, it shd come out clean.
- When baked, cool cake by placing the mold upside down immediately and wait till totally cooled before unmolding.

Just as i'm fretting over how to finish using up my egg whites (after the kueh lapis). I guess this recipe came in handy! =)

Ur cake looks yummy and it came out nicely. any hint that can prevent the cake collapse after removed from cake mold?

You're welcome Youfei.
Ah Shui, if the cake collapsed before you even unmold it, then there's many factors than can cause it to happen. Maybe underbaked or too much liquid, or even overmixing of the egg white. You probably need to experiment and troubleshoot yourself. :)

Hi Ida,
Just wondering if i can flavour the cake in other ways. i.e. not using dried lavendar.
Any idea how to go about doing it?

Hi Ida,
Just tried out with some instant milk tea pwder added.
i might have added too much, the texture was almost like "kueh". Not too sure what went wrong. =X but it still looked alright haha

Hi Youfei,
I read abt your attempt on this cake. Strangely, mine did not have the same texture as yr cake.
For subsitution of the lavender, I guess anything that's dry shd work.

i think i might have:
1. over beaten the whites
2. added too much milk tea (i added about 3 tbsp of milk tea powder
i guess im gonna give it a shot again using lavenders this time. btw, is the batter very very thick? i.e. thicker than the normal chiffon batter?
it seems like really difficult for me to incorporate the flour into the whites. and i think i might have deflated it alot in the process.
also, how full do you fill the tins till? i filled it about 80% full and managed only to fill 2 tins.

Hi Youfei,
The whipped eggwhites were quite light, and after adding in the flour, it's not thick.
Maybe you did deflate too much air bubbles while folding in the flour. I got 3 tin filled 85% as I did not know if it'll rise much. In the end, it did not rise. i got a flat top for all 3.

Just one more thing, did you cover the tin with a foil whilst baking?

I found the lavender taste just nice. was so worried it may taste like soap! luckily those who tried it found it acceptable.
