Corned again ;-)
Here's the corn muffin recipe I've tried. Made some modifications... I've only half a cup of cornmeal and then I added a heap tablespoon of sour cream to it. What you need
- 1 1/2 cup flour
- 1/2 cup cornmeal (original recipe called for 3/4 cup)
- 1/2 tsp baking powder
- 1/2 cup butter (room temp)
- 2/3 cup sugar
- 1/4 cup honey
- 2 medium size eggs (i used 60gms eggs)
- 1/2 tsp salt
- 1 tablespoon sour cream with milk to make up 1/2 a cup. (original recipe called for 1/2 cup milk)
- 1 cup frozen corn kernels(original recipe was 3/4 cup)
What to do
- Preheat oven to 200C and line muffin tray with liners.
- Sift tog flour, cornmeal and salt. Set aside.
- Cream tog butter, sugar, honey and salt.
- Beat in eggs one at a time.
- Fold in the dry ingredients, alternately with milk+sour cream mixture.
- Finally, fold in corn kermels.
- Fill muffin liners 3/4 full.
- Bake at 180C for 25 mins.
- Makes 12 muffins.

Well, it's closer to kenny roger's but i find it abit dense. maybe it's my mixing....

No worries, there's always some fin in our lives that we dunno abt. wad's impt is that we ask! hehe....
Cornmeal is flour ground from dried corn, and is a common staple food in many regions of the world. COrn kernel is the part of the corn which you eat on the cob.

I like to visit yr blog and thanks for sharing all those lovely receipes. I realised this corn muffin recipes and u mentioned using cup. May I know the actual measurement in gm? Or pls enlighten what kind is the measurement in terms of gm if is equivalent to cup ?

thanks for dropping by. There are measuring cups for sale at baking supply shops and also supermarts like cold storage and ntuc. if you do not intend to get those cups (they make life so miuch easier when u come across recipes like these, really!), go to baking sites like baking911.com and look for conversion tables to check, ok? when u measure using cups, it's in volume, but grams is weight, so ingredients like sugar and flour may not weigh the same even tho the recipe may ask for the same 1/2 cup.... do check, k?
