Almost a cupcake....

Today is the 15th day of CNY... which is yuan xiao. After today, CNY is considered over for Chinese... which leaves a big headache for alot of people... unfinished cny goodies! DH bought a big box of mandarin oranges on the eve of cny.. and now i got at least 20 oranges sitting in my fridge!

I remembered seeing a recipe on mandarin oranges muffins last year but i can't seem to find it anywhere now. So happened that I was browsing thru' some blogs last Thursday and came cross this. Read abt her write-up for the muffins... the recipe is also posted there. Thanks Happy Homebaker!

Here's my muffins...
The texture almost like a cupcake but it is essentially a muffin. Yummy... and moist. Tho' I'll add in more stuff like nuts or chocolate chips if i'm making another lot of this, as I got feedback that it taste rather bland.
