Chiffon ..... again

Well, like Elyn said, since the heart-shaped chiffon mold is so expensive, we have to justify the buy by baking more chiffon cake!

So here's another chiffon cake by me. :P

This time, I wanted something really plain and simple. Looked through Kelvin Chai's Chiffon Cake is Done and settled on one of the recipes. But I wanted to have a tinge of strawberry taste to it, besides the vanilla flavour, so I took out 1/3 of the batter and added strawberry paste to it.

The final cake was really so soft and light! Mom even commented that it's like eating cotton wool. LOLz....
I love the soft colours and the pretty swirls.

Pork Floss Buns

I craved for some sweet buns, so I bought a pack of pork floss and set to work on it. :P

I used the water-roux method for the dough and it turned out really great. Proofing was a breeze but I was lazy... did not glaze the top of the buns before baking them. Anyway, I'm pleased with the outcome. The bread is nice and fluffy. Thanks SD for sharing his recipe.

Shepard's Pie

This was my contribution to the Mother's Day "potluck" dinner we had at home. Mom decided to have our meal at home instead of eating out this year. I thought it was a good idea as Mother's Day is so commercialised nowadays. It is crowded in most restaurants and they have all sorts of Mother's Day menus, just to make you part with your money. I dun mind if the food is good, but then you have to make reservations, and most of the time, its too rush and you have to put up with sub-standard food 'coz of the crowds.

Anyway, I always wanted to try making shepard's pie. And here it is....
The recipe for reference :
What you need
  • 5 medium size potatoes
  • 20gm butter
  • 2 medium size yellow onions
  • 1 medium size red onion
  • 500gm minced beef
  • 2 packs of cream of corn (del monte brand)
  • 1 pack of mozzarella cheese
  • 1 - 2 tbsp of mixed herbs
  • 1 tsp of soya sauce
  • Pinch of salt
  • Dash of fish sauce
What to do
  • Boil and mash potatoes. Add 20gm of butter while potatoes are still warm. Mix in and then set aside (this can be done earlier and kept in the fridge).
  • Cube onions and start frying in pan. Add in some water and cook the onions till soft.
  • Add in the minced beef and fry till cooked. while frying the beef, place in 1-2 tbsp of mixed herbs and seasoning.
  • When beef is almost cooked, pour in both packs of cream of corn and let it simmer for 10mins.
  • Preheat your oven at 180c.
  • Off the fire and transfer the cooked beef into a casserole.
  • Level the meat and then spread a layer of shredded mozzarella onto it.
  • Then, put the mashed potatoes on top and level it. Top it with more cheese.
  • Place casserole into oven and let it bake till the top is golden, takes at least 30mins.

Mother's Day Cake

Decided to bake a Mother's Day cake in advance. If it's baked on the day itself, we'll most probably be stuffing ourselves silly with food! (and more food!)
This is a mixed berries chiffon cake. There's raspberry puree added in the cake batter... and also cubed strawberries too! and then decorated with blueberries and MORE strawberries. Love how it turned out... and the strong berries taste to it!
Happy Mother's Day everyone!
